These were the first words my husband uttered to me at 3:00AM as he was rolling out of bed.

First of all, is it really necessary to say anything at such an hour of the morning when the person you’re talking to has another good hour and a half of sleep ahead of her? I don’t think so, but I let it slide because at least it was something nice.

What he was smelling was Monday night’s supper that I popped in the crock pot Sunday night before I went to bed. When I got up, I spooned everything into a big Pyrex mixing bowl, covered it and popped it in the fridge. More details on that dish later.

Breakfast was a new-to-me breakfast treat. I spotted these Nature’s Path Organic Frosted Blueberry Toaster Pastries in the clearance bin during our grocery trip on Sunday and decided to give them a try.

I really like the taste of these. They are extremely sweet. Overall pretty similar in texture and flavor to a regular Pop Tart. They are vegetarian, contain whole grains, are low sodium and contain no trans fat. That said, the calorie content is a little on the high side (200 per pastry; 400 per pouch) and the total fat/saturated fat content isn’t significantly lower than the mainstream counterpart. Overall, I’d say these are a better alternative to many non-organic breakfast options, but by no means should it be considered “healthy.”

Lunch was again mooched from my parents. They had leftover chicken stir fry and rice from their Sunday night dinner. No picture, but it was loaded with veggies including zucchini from our garden that I’d taken to them last week.

I hit my daily sugar slump around 4:00 and decided to break out my last packed snack. I was FINALLY able to get my hands on this Luna bar flavor over the weekend after hearing so many bloggies rave about it’s goodness.

It was everything I’d hoped for and more. It tasted kind of like cookie dough. I can’t quite put my finger on which kind, though. Not chocolate chip or peanut butter. The bar refueled me and I was wide awake and alert for my drive home.

The same cannot be said for my navigator.

With the pork main dish waiting in the fridge, dinner was a cinch. I popped it in the microwave to reheat while I got to work on long grain rice and cornbread. Hello carbohydrate heaven!

I also sliced up two medium-sized zucchini, dipped them in egg whites, coated them with a mixture of breadcrumbs, grated Parmesan cheese, paprika and parsley flakes and then baked them on a greased cookie sheet at 400 degrees for about 30 minutes.

The meal wasn’t very colorful, but it was tasty. I ended up passing on my cornbread because I was just too full from the pork, rice and zukes to eat another bite.

All the technical gods are smiling upon me today. My camera and laptop are communicating effectively so we’re all systems go.

First, you have to suffer through my eats and ramblings of the day. 🙂

I woke up STARVING which is becoming a daily thing lately. I had (another) bowl of Cascadian Farms Multigrain Squares with organic skim milk and a POM (“pregnant lady”) spritzer. No picture today. If you really want to see, check out breakfast yesterday.

Morning snacks were a Yoplait Light yogurt (Raspberry Yogurt flavor) and a Cookies ‘n’ Cream Luna Bar.

We’re starting month 2 of the workouts at work and I’m really glad. We lost 2 members, but gained 2 new ladies so that cost stayed the same. Our trainer forgot to bring the hand weights so there were more core stations than normal in our circuit. Loved it!

After my workout I had the leftover egg noodles from last night. I packed chicken breast and Italian dressing to put on top, but icky tummy syndrome has been hitting me in the afternoon and the only things that sound appealing are bland & carby eats. I just tossed them with a little EVOO and parmesan cheese. Forgot to snap a picture, but it would have been a really boring one anyway. I wasn’t hungry the rest of the afternoon so I guess my body got whatever it needed from that.

I was, however, hungry again at dinner time. I rubbed some pork chops with garlic, baked them and served baked potatoes on the side. The potatoes were HUGE. I only had half of one, but it was plenty.

See that delicious looking sauce served on the side? That’s Country Bob’s All Purpose Sauce and it is DEEEE-licious! The very generous Al from Country Bob’s sent me some of their yummy sauce to sample. My husband and I were instant fans. The flavor is really unique without overpowering the food it’s accompanying.

I apologize for my lack of posting last night. It was for a good cause. My roommate from college (whom I love and adore) delivered her 2nd baby yesterday evening and I had to fulfill my promised portion of the phone tree. Welcome to the world baby girl! The name they chose is very, um, unique. Makes me want to watch reruns of the once popular Boy Meets World. There was only one female main character in that show, right? Catch my drift? Yes, I’m serious.

Anywho, on to yesterday’s eats. I slept in a little to make up for my late bedtime Tuesday night. Darn you Biggest Loser! I was in a hurry this morning so I plopped two fried egg whites and a slice of 2% American cheese on a whole wheat english muffin and ate it in the car. I did try to snap a picture while I was rushing around like a mad woman, but I got the ever dreaded “Change Battery Pack Now” message on my camera screen. It really wasn’t that pretty anyway.

Wednesday = Coffee Day(!!!) so I arrived at work to find a crimson cup waiting on my desk. It was filled with my standard venti skim gingerbread latte. I opted for the hot version over the frozen this time in honor of it being 2 degrees outside. The battery pack was on charge so no live picture, but this is as close at it gets.

That kept me full until noon when I heated up my Turkey Taco Quinoa Stew. So. Freaking. AWESOME! I’ve had the same thing for lunch every day this week and I’m nowhere near tired of it. Today’s lunch tea was Celestial Seasonings Antioxidant Plum white tea.

After lunch I sat through the most painful training/brainstorming session ever! I love organization. I crave structure. This 1.5 hour train wreck had neither. I left feeling more confused than I was beforehand and I was very anxious. That called for a cup of Tazo Calm tea. Along with the tea I did some breathing exercises at my desk to help me get back to my happy place. Thankfully the rest of the afternoon went by quickly.

I listen to audiobooks a lot during my commute to and from work. I love to read so it’s a great way for me to make the most of my 3 hours spent in the car each day. During my trip to the library earlier this week I picked up Raising the Bar: Integrity and Passion in Life and Business by Gary Erikson, the founder of Clif Bar & Company. I love books. I love Clif Bars. Coincidence? I think not! I started it Tuesday and so far I’m really enjoying it. I’ll post a better review when I’m finished listening.

Early on in the book they outline how Luna bars came to be. I’m ashamed to admit it, but until then I wasn’t aware that Luna bars were made by Clif Bar & Company. You learn something new everyday! In the spirit of the book, I packed this for my drive home snack. I swear this flavor is becoming like crack to me.

It was a quick change into workout gear when I got home so that my husband and I could hit the gym before dinner. Turned out to be a great workout. I warmed up with 10 minutes on the elliptical then did the Week 11, Day 2 workout from Buff Brides by Sue Fleming with bursts of cardio between the sets of upper & lower body exercises. I finished with crunches. I burned 426 calories in 48:13.

Afterwards we headed home and had breakfast for dinner! My husband and I are both big fans of breakfast food so at least one night every other week is devoted to our love of traditional morning fare. Last night it was pancakes and sausage. I had one of each. My pancake was topped with Parkay spray and a little bit of maple syrup.

Not to toot my own horn, but my pancake skills last night were off the hook. My husband deemed them perfect!

I got the baby news just as we finished dinner so I called everyone on my list while I cleaned up the kitchen. My adrenaline was still pumping from my workout so I took a hot bath to unwind and then headed to bed.

I’ve only been at this food blog thing for 4 days and already I’ve had a failure. 😦 Well, not a failure in the food. Just a failure in my camera preparedness. I promise to do better in the future.

First, my battery was completely dead this morning when I made my peanut butter & blackberry jam toast. Nothing exciting. Same thing as yesterday morning. Afterwards my husband and I headed into town to run errands. He dropped me off at the grocery while he went to get a hair cut. I had a pretty successful trip except that they were sold out of organic honeycrisp apples because there was a sale on them this week. Boo. On a happy note, I did save $55 with coupons. That made me happy, but my real victory of the day is that my grocery has started carrying Fage! They only had two containers left and I bought them both. This probably doesn’t seem like a big deal to many of you, but it is to me. The closest Whole Foods to me is almost 2 hours away and the closest Trader Joe’s is just over an hour. The natural & organic food section at our grocery is just one very small corner of the store and doesn’t carry a great variety of brands. It makes me sad.

My husband met me outside after I’d checked out and helped me unload the bags into the trunk. I was really hungry so I grabbed one of the Luna bars I’d just purchased. They were on sale this week and I was inspired to try a new variety, Cookies ‘n Cream Delight, after reading this post over at Eating Bender. I think this is now my favorite flavor ever from Luna. It really does taste like an Oreo cookie. I’m glad I bought two on this trip and I’ll be buying more later. The camera battery was still at home on charge so no picture.

After the grocery we came home and I did some cleaning and laundry. My parents and my mom’s friend drove down and we went out to late lunch/early dinner with them to celebrate my dad’s birthday. There’s a restaurant near us that he loves called the Old Canal Smokehouse. I truly think the only reason they visit is so they can eat there. lol

Camera faux pas #3: I forgot to take it to dinner! It’s really a shame because this restaurant is heavenly and I would have loved to share pictures of the food. Guess that just gives me an excuse to go back soon. I started with a side salad of mixed greens, cheese & the most delicious sun-dried tomato dressing in the whole world. I really wish they’d sell it by the bottle or give me the recipe. My mom and I split an entree of red snapper with foccacia salsa made of diced tomatoes, sliced black olives and some various peppers that made it a little spicy. On the side I had wild rice. I also had one of the baby cornbread loaves they’re famous for serving.

Not much else going tonight. We didn’t make definite plans because we weren’t sure what time my parents would be coming. There was a Wii rematch following yesterday’s annihilation. This time I dominated! Right now we’re relaxing and watching National Treasure 2 while I catch up on blog reading. I hope everyone is having a great weekend!
