Saturday was a laaaaazy day in the UFC household. Well, for me anyway. My husband was up and at ’em at his usual time (2:30AM) and out the door at 4 for a Saturday work meeting. I got up long enough to see him out the door and then headed back to the cozy bed for more rest and cuddle time with the pup. We ended up lounging there until about 8:30. I was still tired, but decided it was well past time to get up and moving.

Breakfast was a fiesta for one:


  • flour tortilla (we were out of the healthy kind)
  • Morningstar Farms Spicy Black Bean Burger chopped into chunks
  • scrambled egg
  • shredded cheddar cheese
  • dolop of sour cream
  • salsa

It was delicious and very filling! It was enjoyed alongside a good book and some hot maple tea from Canada, courtesy of my aunt on her last visit.


There was also a hungry, hungry hippo at the table:


Breakfast was followed by reading on the porch and a nap on the couch. I had the brilliant idea of a 30 minute workout to boost my energy. It felt good to move, but afterward I was back to lounging.

My husband finally got home around 3 and was pooped. I’d purchased some video games for him from eBay and told him I’d at least like him to test them all out and make sure they worked before I left feedback for the seller. His comment? “I never thought I’d hear my wife tell me that I NEEDED to play my video games.” He did just that while I read some more. Neither one of us found motivation to do much more than that for the rest of the evening.

Sunday I was determined to be more productive than Saturday. We got up fairly early (AKA before 8:00), got dressed and headed to town. My husband got his hair cut while I walked the perimeter of the shopping center. Next was lunch out. We always think that we want Buffalo Wild Wings, but it turns out to be a disappointment every time. Too bad none of the local places are open on Sunday.

After lunch was grocery shopping. We came in under $75 which isn’t bad considering I didn’t shop at all last weekend. I also found this gem in the clearance carts:


Regular price $12, marked down to $5! I love videos from The Firm and have been wanting this one for a while. It’s high impact so I won’t be doing it anytime soon, but it will give me something to look forward to later.

I was putting groceries away when my husband walked in the back door with a stressed look on his face. All he said was “I’m going to need some help. Grab some bags.” I had no clue what the problem could be until after I’d followed him to the garden. We filled 4 bags with yellow squash, banana peppers, a few cherry tomatoes (FINALLY!) and some ginormous zucchini. Now I know what everyone meant when they told us that these things can quadruple in size overnight.


What’s the best way to prepare an arm-sized zucchini?

I spent the majority of the evening cleaning and organizing in the baby’s room. I filled the trunk of my car with things to take to my parents for their garage sale and listed a few items on eBay. I LOVE the feeling of getting rid of things I don’t need!

29 weeks down, 11 to go! I know that I am growing a life and that these extra 40 (!!!!) lbs. are necessary to protect the Peanut. That said, I really want my body back.

Is anyone else watching The Next Food Network Star? I am. Last season was the first time I watched with any regularity and I’m hooked back in this time around. I’m really pulling for Melissa d’Arabian to win this time around. I love all of the tips, tricks and info she shares during her demos and feel like her show would be something I would actually watch.

As a soon-to-be-stay-at-home mom, I enjoy her frugal shopping strategies and home cooked meals that are both healthy and picky-eater approved. On a recent episode, she talked about how she likes challenging herself to skip the grocery and make meals for a week using what she already has in the house.

I find myself going to the grocery just for fun sometimes and end up spending waaaaay more money than is really necessary. I decided to adopt Melissa’s strategy this week, skip my usual Saturday grocery trip and get creative. When I sat down to menu plan, I was extremely surprised at how much food we already have in the house. I’ll be posting our meals as they appear this week.

We purchased a roast on sale several weeks ago and it’s just been chillin’ in the freezer since then. I popped it into the crock pot (still frozen) with a can of beef broth and a small can of mushrooms. To season, I sprinkled the top with some Garlic, Garlic and Onion, Onion. 8 hours later, voila!

I saw a commercial for these the other day and it reminded me that I’d received a package from the generous folks at Buitoni to sample.


***Product Review***

Wild Mushroom Agnolotti

Here’s what the manufacturer’s website says about them:

A blend of earthy mushrooms, including sweet, rustic portobellos and delicate criminis, creates an impeccable pairing with fresh-roasted garlic and imported grana padano and parmesan cheeses, wrapped inside thin layers of stone-ground semolina pasta.

I’ve been waiting for the perfect moment to break them out and this seemed to be it. The verdict? Delicious! My husband and I both agreed that this pasta needs no heavy sauce to make it flavorful. The rich mushroom filling does the trick just fine. We topped ours with just a bit of beef broth that cooked in the crockpot with the roast. The nutrition information wasn’t necessarily the most figure friendly, but I found that 1/2 of the recommended portion was more than sufficient as a side dish. These were nice for a casual weekday supper and I think they’d also be great for a more formal event as well.


Tonight’s veggie was zucchini from our garden, cooked just until tender in a little bit of extra virgin olive oil and garlic. I topped mine with a little paprika.


Dinner is served!


My meat and potatoes husband, was over the moon with excitement for this meal. It makes me feel great when I can prepare something that he really enjoys.

After dinner, I straightened up the kitchen, packed lunches, this workout (3 sets, 15 reps of the advanced moves) from FitPregnancy.com, tossed in a load of laundry and chilled with the hubs and the pup.

Every single time I see the word auction, I can’t help but sing (in my head) the John Michael Montgomery song, Sold! Country fans? Anyone? No?

Yesterday started off pretty sad for me. I got word that the OB I’ve been seeing for all things baby passed away unexpectedly over the weekend. It appears to have been a heart attack. I was so saddened by the news and my glum feelings matched the grey, cloudy, rainy weather outside. Dr. K was truly a remarkable man. Not only was he an MD, but he was also a practicing Catholic priest. As if that wasn’t enough, he did tons of charity work. He touched the lives of many and will be missed greatly.

I was in a hurry to pack lunch and snacks for yesterday which resulted in very unexciting eats. Breakfast (not pictured) was a toasted whole wheat English muffin with peanut butter and Amish blueberry jam.

My morning snack was a Chocolate Brownie Clif Z bar. I picked up a few different flavors of these at the grocery last weekend. They’re designed more for kids than adults, but I like that they’re low in calories, still very filling and quite delicious. They taste more like a chewy cookie than a traditional bar and this one was VERY chocolaty.


Lunch was another English muffin topped with a Boca Chik’n patty, Laughing Cow Light Swiss and yellow mustard. I’ve been through 2 boxes of these Bocas in just a little over 2 weeks. Can we say addicted? On the side I had a 100 calorie bag of Smartfood White Cheddar popcorn. My grandma used to stock this in her house and it was a favorite snack of all us grandkids. Brings back some fun memories.


My afternoon snack was an entire package of blackberries. I brought it thinking I’d eat half and save the other half for another day. They were perfectly sweet and tasted so good that I just couldn’t stop myself.


Dinner was hijacked from my parents’ house. Mom made way too much goulash and said there was no way she and my dad could eat it all. She sent a generous container home with me which made dinner quick and easy at our house. Mom’s version is made with macaroni noodles, Classico Four Cheese pasta sauce, sliced mushrooms and grated Vermont cheddar cheese. We topped ours with grated Parmesan cheese from the Amish store and paired it with fresh-from-the-oven French bread

“Don’t pay the ransom. I’ve escaped!”

That’s what we used to say in my family when someone called home after being away for a while with no contact. Corny, yes. Very fitting to our family. 🙂

I apologize for my extended absence. As any US resident probably knows, it was Income Tax week. This is, to us working in a local Income Tax department, what the week before Christmas is to those working in retail. In one word: CHAOS! I had 0 time to snap photos of my food and my evenings were pretty much just commute, eat dinner and crash.

Now I’m back and excited to start blogging and commenting again. I’ve missed you all bunches and look forward to getting caught up on what’s going on in all of your worlds.

I won’t waste anymore time. Let’s get down to business!


Breakfast was a quick sammie made with an egg, 2% American cheese slice & a Boca Chik’n Patty all on low-cal bread. No, mom. I didn’t take the picture while I was driving. I snapped it quickly in the driveway before hitting the road.


The morning snack was a string cheese:


Lunch was leftover Laughing Cow Alfredo Bake topped with grated Parmesan cheese (from the Amish store) and a little drizzle of EVOO. This was a first go ’round for us and this recipe. We both liked it, but I thought it was a little bland when we originally had it for dinner. We both agree that it’s much better reheated for lunches.


Workout at work was nice. She had lots of stations set up where we had to lie on our back. That’s the one exercise restriction I have right now so I had to improvise. We did the squat, curl, press move last Friday and I really liked it so I stuck that’s become one of my go-to moves for stations where I need to get creative.

After April, I’ll have to find something new to do fitness-wise on my lunch hours. The weather is getting nice and less people are interested in participating because they want to go walk. The employee fitness room will still be available although the only equipment is a stationary bike, heavy weight bench and an ab recliner. I’m thinking about bringing my own light dumbbells or loading up some mp3 files from yogadownload.com onto my iPod and carrying in my yoga mat. Walks are always an option. I just get bored easily and need to keep it mixed up.

Post-workout snack was a sliced apple. Have I ever told y’all how much I LOVE my Pampered Chef slicer? Cuz I do.


I had a huge energy dip around 3:00 in the afternoon. I’m not quite sure where it came from, but it was bad. All I wanted to do was put my head down, clothes my eyes and snooze. I’m blaming the tired (and my lack of willpower) for giving in when a coworker said she was going to the soda shop across the street for sundaes. I had a single-dipper with a generous dolop of hot fudge sauce, whipped cream & a cherry. The sugar shocked my system and I was beyond wide awake for the rest of the day.


Friday night dinner was quick and easy. I had fat free hot dogs, no bun and spicy mustard. To redeem myself nutritionally, I also had a small side salad. No idea why I didn’t snap a photo although it was far from exciting.


The morning got off to a quick start when my husband’s coworker called to say his new company truck was ready to be picked up. One catch. It was sitting at a plant about an hour and a half away. He asked (very nicely) if I’d drive him up and I agreed. It was up, showered, dressed and out the door. I did manage to throw together a PB&J sandwich to eat on the road, but no picture.

We were home before noon and both pretty hungry. I had a Boca Chik’n Patty on an Arnold’s Multigrain Sandwich Thin with 2% American cheese & spicy mustard. On the side, I had a handful of Ranch flavored Potato Crisps. These are really good and a nice, more natural alternative to potato chips.


My husband and I spent a few hours working in the yard. We’re ripping out some shrubs and ornamental grass from a flower bed that were there when we moved in last year, but it’s proved to be a bigger job than we’d anticipated. My husband did the shoveling and I did the pulling which, at one point, resulted in stabbing myself in the lip with something straw-like. We tried until we just couldn’t take it anymore and laughed…a lot.

My husband’s best friend from high school stopped by shortly after we finished and they spent the entire evening (and well into the night) catching up. He’s a great guy and they don’t see each other often enough so I was glad to see them hanging out. I bounced back and forth between their conversation and reading for my Nutrition and Wellness Consultant certification. Around dinner time, I offered to fix something. They said they weren’t hungry enough to eat a full meal, but took me up on my offer of snacks. After serving them, I realized that I was a little hungry and in the mood for something hot.

The pros: Yum! I loved the texture of this soup. The rice, veggies and beans tasted great together. The broth had just the right amount of seasoning without overpowering any of the other flavors. The protein content was higher than most other canned soups and left me feeling very full. I’d absolutely buy this soup again as either a quick dinner or easy to transport lunch.

The cons: The sodium content was the biggest drawback for me. I ate both servings which was almost my entire sodium allowance for the day! I could absolutely feel the effects in my swollen fingers the rest of the evening. The soup didn’t taste salty at all so I was a bit surprised by this. I was also surprised to see chicken listed so high on the ingredients list because I think there were only 5 or 6 small pieces in the entire can. This was fine with me because I usually pick the meat out of canned soups anyway, but I could see a serious carnivore (like my husband) being disillusioned.

I have a love/hate relationship with Wednesdays aka “Hump Day.” Part of me is really excited because it marks the halfway point of the week. The other part of me is just wishing it were closer to the weekend.

Lately I’ve been hit or miss with my morning exercise. I’m trying hard to get back into that routine. Yesterday I was awake early. Instead of laying there and snoozing I decided to get up, see my husband out the door for work and then do a little yoga.

My selection was the free 20 minute (actually 25 minute) Prenatal Yoga class from YogaDownload.com. It was incredible. This sounds strange, but the best way I can describe the way I felt when I finished is “healthy.”

Another coffee day at work which meant a frozen skim white mocha. Yum! I swore I took a picture. Either I’m crazy or my camera ate it. Oh well.

I was completely unhungry (is that a word?) until lunchtime so no morning snack. My lunch was homemade egg salad on a La Tortilla Factory Tomato & Basil Softwrap with just a little bit of shredded 2% cheese.



A few coworkers and I pulled a great April Fools joke over on my boss that left me giggling all afternoon. I didn’t expect him fall for it, but he did. Hook, line & sinker! I have to watch my back now because he’s sworn revenge on all of us.

Later in the afternoon I had some more Stoneyfield Farm Oikos yogurt (honey flavor) with Bear Naked Fit granola and unsweetened coconut flakes. This time I knew to stir it up before I added my toppings.


I couldn’t hit the door fast enough at 5PM. The sun was shining and I couldn’t wait get out for some fresh air. I picked up the pooch, chatted with my mom for a bit and then headed home. My husband was staying out of town so it was just me and the puppers.

For dinner, I decided to make stir fry. My husband doesn’t like Chinese food (or anything ethnic besides Mexican) so I don’t have it very often. Mine last night was pretty quick and easy. I just steamed a bag of frozen veggies, cooked some organic whole wheat pasta and topped the whole shebang with a mixture of Tastefully Simple Sweet Sassy Mustard Sauce and reduced-sodium soy sauce. Yes, I do realize that rotini isn’t exactly Chinese and thin spaghetti or rice noodles would have been more appropriate.. I had a partial box that I wanted to use up before I opened anything new.


I had good intentions of magazine reading and painting my nails after dinner, but I pooped out early and just wanted rest. I talked on the phone with my husband for a while and then turned on Jon and Kate +8 while I curled up on the couch with a cozy blanket. That’s where I fell asleep and didn’t wake up until this morning when my husband called to say “Good morning.” I got more sleep than usual, but I still feel tired. I also have a nasty crick in my neck. Next time, I’ll make myself go to an actual bed when I get that sleepy. 🙂

I got so wrapped up in blog reading and commenting yesterday that I forgot my own post. Oops! So, here are Tuesday’s eats:

Breakfast didn’t look great, but it tasted good. This was part of what was in my lunch bag when I left it in the fridge. No worries. though. Day old (refrigerated) yogurt with Bear Naked Fit granola and blueberries is a little mushy, but a-ok.



Stonyfield Farm Organic Lowfat Yogurt

The lovely Kristin of Stonyfield Farm sent me some extra coupons along with those for the Oikos and I advantage of a few at the grocery last weekend. I thought this plain yogurt was really good. The taste reminded me a little bit of Greek yogurt which I LOVE so that was cool. The texture was really smooth and it mixed well with my add-ins. The combination left me feeling full for several hours which is rare for my tummy. I’m glad the tub is big because I plan on incorporating it in for more breakfasts very soon.

Another afternoon snack: celery sticks and Sabra hummus with hot sauce:


Right before leaving work I had a Blueberry Crisp Clif bar. It’s one of my favorite flavors. I’m allergic to artificial blue coloring (which is in more things than you would think) so I’m glad these are natural. They’re deliciously fruity and crispy, all at the same time.


After seeing what I ate during the day, it’s probably no surprise that I wasn’t too hungry come dinner time. Eggs sounded good so we had sammies. Mine was egg, cheese, a little corned beef (heated in the microwave to kill the listeria bacteria) and mustard all on low-cal wheat bread. I woke up STARVING because I didn’t eat much of a dinner last night. Two Kashi waffles with a little butter and lite maple syrup filled me right up. I’d really like to start posting pictures of my first-thing-in-the-morning meals. It’s still dark when I leave the house so I can just never get the lighting right.

I ate the last bit of my strawberries after getting settled in at my desk.


I ate what was supposed to be my lunch about an hour and a half before workout time. Morningstar Farms Spicy Black Bean Burger, a wedge of Laughing Cow Light Swiss cheese and lettuce all on a La Tortilla Factor EVOO Tomato & Basil Softwrap. Here it is pre-rollup.


I was trying to decide what to do about being lunchless when my coworkersaid she was calling in an order to the fancy hotel bistro across the street and would pick it up after our workout. Clearly, it was meant to be. 🙂

Our workout at work today had tougher cardio stations than normal and I could feel the burn. My favorite exercise today was the BOSU trainer plank. I was grateful to have food on the way when I returned because I was hungry.

I had the spicy vegetarian rice rolls. All I can say is HOLY WASABI! They came with a veggie blend (tossed in balsamic vinegar) and their homemade chips. I ate everything except the onions from the veggie salad and about 1/2 of the chips. I’m a little worried that these will become an addiction. They were sooooo good.


I had an afternoon craving for something sweet, but the only thing available in the office was candy. I ran over to the cafe across the street for a chocolate chip oatmeal cookie and ended up with a cup of unsweetened raspberry iced tea, too.

It always feels so good to leave work on a Friday evening. There’s just something so exciting and freeing about knowing you have those 2 days ahead of you for fun. I called a few close friends and family members during my commute to share our baby news. Everyone was thrilled and offered lots of encouragement.

I wasn’t even a little bit hungry for supper. I had toast with butter and jam at some point, but no photo because I was really into the Ohio State vs. Siena basketball game. The outcome didn’t help my bracket any, but man that was a good game! I’m not usually a big fan of basketball on TV, but that’s changed a bit since I’m in the office pool this year. 🙂


I slept in a little and was worried that the grocery would be crazy busy since I was going a couple hours later than normal. I ate some Kashi waffles and was out the door.


The grocery was actually quite peaceful. I had freedom to browse without being crowded or pushed along by the flow of cart traffic. This resulted in some new products which I’ll be reviewing here soon.

After the grocery, I stopped at the bank and then the local coffee shop for a light iced java chip frappe. It’s one of my favorites.

By the time I’d put groceries away, I was hungry for lunch. I tried something new and made my organic whole wheat couscous in the microwave per the directions from the box. It worked perfectly! Actually, I think it turned out even better than on the stovetop. I added some black beans and Tastefully Simple Mild Red Pepper Salsa.


I also had VeggiePatch Veggie Nuggets with mustard for dipping.


After lunch, I headed outside to do some reading for my Nutrition & Wellness Consultant at-home study. That’s where I spent most of the afternoon into early evening. The sunshine felt great! We didn’t have an “official” dinner. I just did a repeat of lunch because it was so yummy and then hung out with my husband until time for bed.

I have some water (in my reusable bottle of course) and fresh iced sun tea for refreshment. Those are clothes drying on the line in the background. That’s one of my favorite parts of warm weather. I love the way they feel and smell. The real perk is that it’s more eco-friendly than the dryer. Plus, it cuts down a LOT on our electric bill.
