Baby, It’s Cold Outside!

Today started off pretty well albeit a bit too early for my liking. The alarm went off at 4:30 when I’d planned to get up, get dressed and exercise for a little while. My last few nights of sleep have been restless and I haven’t gotten much actual rest so, since I was comfortable and actually tired, I let myself sleep in until 5:15. I got up and hopped on the Wii Fit. It didn’t substitute for the workout I’d planned, but it got my blood pumping and woke me up a little bit more.

Breakfast was two egg whites and a slice of American cheese (made from 2% milk) on low-calorie wheat toast. I was thrilled to find that my husband made a pot of coffee. I had one cup with my sandwich and poured another into my travel mug for the commute.

I’m glad I’d laid out warm clothes for today because it was COLD. I’m not sure what the exact temperature was when I left at 6:30, but I was extremely grateful for the new wool coat and cashmere scarf that my mom bought me for Christmas. My hour drive went by pretty quickly today. When I got to the parking lot I re-bundled myself up and headed from the parking lot and into the building. Wednesday is coffee day in our office. We place our orders on Tuesday and the boss man picks everything up from the local coffee shop on his way in on Wednesday morning. Clearly I didn’t watch the weather forecast ahead of time because I ordered a large FROZEN gingerbread latte made with skim milk and a scoop of protein powder. Oh well. I just bundled up in the blanket I keep at my desk since our office is always cold.

Thanks to the protein powder, the latte kept me full until lunchtime. I ended up working through lunch so that I could leave at 4PM before the weather was due to get really nasty. This meant eating at my desk. On the menu today were leftover Turkey Meatloaf Muffins (dinner last night), green pepper slices & Boursin Light cheese to spread on the peppers. I don’t buy this cheese very often even though it’s one of my favorites. It’s fairly expensive, but I happened to find it on sale last Saturday during my weekly grocery trip. The turkey meatloaf muffins are a recipe given to me by a friend. My husband loves them so they make their way to our menu pretty regularly. These are super easy to make, taste good and are very filling.

I stepped outside to take a picture of the lovely *cough, cough* weather. This is what it looked like:

My office has floor to ceiling windows and the outside temperature tends to radiate through. Warm beverages tend to help. Since That meant lots of hot tea and hot water over the course of the afternoon. Today I was drinking Tazo Awake. I also had a package of pizza-flavored Pringles Baked Wheat Stix around 3 when I wanted something salty. I really need to brainstorm some more nutritious snacks to fulfill that craving. The two redeeming qualities of these is that they’re pre-portioned and have a little bit of fiber. Other than that they’re empty calories.

The drive home was longer than usual. The roads were still covered with snow. It took me about an hour and a half instead of just an hour to get home. My sister-in-law and I were going to try a new spinning class at the gym tonight, but it was cancelled since the instructor didn’t want to drive in. Bummer. I wanted to go anyway, but the snow started coming down even heavier and my husband said it was probably best to stay in. I did some squats, lunges and a few upper body moves with my hand weights at home instead.

Dinner was very unexciting. Not even exciting enough to warrant a picture. Sorry. I threw together some beef stroganoff for my husband and served it over brown rice. I had some of the rice mixed with salsa along with a big salad loaded with random things I had in the refrigerator and needed to use up.

I’m off to lay out clothes to wear to work tomorrow, pack lunches and then get to bed. Good night!
